This unique hub brings the community together with delicious, local flavors and a cultural twist. Chef Shane’s vision? To reconnect our community through food, learning, and laughter.

Each weekend, Shane and his team serve a thoughtful, ever-changing brunch menu rooted in seasonal, local ingredients. With deep respect for land, culture, and community, Paperbirch brings Indigenous traditions and contemporary flavours together in every dish.

Indigenous chef Shane Chartrand curates an exclusive, multi-course menu, sourcing only the freshest ingredients from our market vendors.

With each dish, he shares the rich history and traditions of Indigenous cuisine, offering a deeper connection to the food on your plate.

About these events

Step into a warm, welcoming space that feels both like an intimate gathering and a culinary showcase, featuring thoughtful, seasonal cooking, combined with Indigenous culture.

Guests are invited to slow down, connect, and share a meal that highlights local flavour and culture, while Shane and his team guide the evening with attentive service, easy hospitality, and a sense of celebration.

When: Wednesday evenings, from 6:00 pm to 9:00 pm

Menu: A 7-course, chef-curated dinner experience with beverage pairings

Cost: $120 per person, plus gratuity
