Introducing “Paperbirch by Chartrand” at Old Strathcona Farmers’ Market!

Join us in welcoming Paperbirch by Chartrand, OSFM’s newest culinary experience, led by renowned Indigenous chef, Shane Chartrand! This unique hub will bring the community together with delicious, local flavors and a cultural twist. Chef Shane’s vision? To reconnect our community through food, learning, and laughter.

“I’ve always wanted to create a space where our community can connect over local products and experiences that celebrate Edmonton and the surrounding areas,” says Chef Shane Chartrand.

About Paperbirch by Chartrand

Paperbirch by Chartrand is a vibrant culinary hub at the Old Strathcona Farmers’ Market, blending community connection with fresh, locally inspired dining experiences.

Every Saturday morning from 8:00 AM to 11:30 AM, Chef Shane Chartrand serves up a delicious breakfast menu, crafted with seasonal, market-sourced ingredients. Curated to be light yet satisfying, the breakfast offerings are designed to highlight Edmonton’s freshest products and change seasonally to reflect what’s in peak condition at the market.

At 11:30 AM, Paperbirch transitions to a food-truck-inspired lunch service, where menu items are made fresh to order. This lunch service, curated by local food truck chefs and owners, provides a unique opportunity for food truck owners to operate comfortably during Edmonton’s colder months. Our current occupant offering their tasty lunch menu is Love, Molly.

Paperbirch is a true community space, blending Indigenous influences, local ingredients, and diverse food truck culture for an experience you’ll come back for again and again. HIY HIY!

Kitchen Takeover: Love, Molly

Welcome to Love, Molly, where every dish is crafted with heart and inspired by life’s rich cultural influences. Founded by MJ, who grew up in Switzerland surrounded by the comforting aromas and vibrant flavors of her immigrant family’s kitchen, Love, Molly brings together healthy, imaginative, and satisfying meals that honor both tradition and innovation.

Love, Molly is taking over the Paperbirch kitchen from 11:30 AM to 3 PM and is serving up delicious and nutritious options. With bistro-style dishes including vegan, gluten-free, and classic favorites, Love, Molly creates something special for everyone.

Each menu item reflects MJ’s passion for cooking and is inspired by a blend of beloved films, classic literature, and music—celebrating creativity in every bite. From the indulgent Devil Wears Prada grilled cheese to the beautifully simple Mrs. Dalloway chickpea and rice bowl, MJ’s menu invites you on a culinary adventure where healthy and delicious collide.

From food truck pairings and culinary competitions to cooking classes for kids, families, and home cooks, Paperbirch will inspire and delight everyone. And for those seeking an unforgettable evening, our Indigenous-inspired dining events will leave you coming back for more!
