• 5 lbs of potatoes
  • Pinch of salt, pepper and paprika
  • 1/2 cup green onion, chopped
  • 1 stalk celery, chopped
  • 2 dill pickles, chopped
  • Fresh dill
  • Fresh parsley


  • 1 cup mayonnaise
  • 4 tbsp prepared mustard
  • 1/4 cup honey
  • 1/2 cup vinegar


In a large pot, boil potatoes until cooked yet firm. Cool, then dice. Sprinkle with salt, pepper and paprika.

Add in green onion, celery and pickles. Mix gently.

In a separate bowl, whisk together mayonnaise, mustard, honey and vinegar. Pour over salad and mix gently.

Garnish with fresh dill and parsley.
